Lemon desserts are so refreshing as the temperatures go up! This lemon meringue pie is the perfect dessert for a family get together. You will love the delicious homemade pie crust and the light and fluffy meringue on top.

Pie Crust
1 cup flour
1/2 cup butter flavored shortening
1/2 teaspoon salt
1/4 cup cold water
Lemon Filling
5 large egg yolks
1 1/4 cup sugar
1/2 cup cornstarch
1/4 teaspoon salt
1 1/3 cups water
1/2 cup fresh lemon juice
3 teaspoons lemon zest
2 Tablespoons butter
Meringue Top
6 large egg whites
1/2 teaspoon cream of tartar
3/4 cup sugar
1/2 teaspoon vanilla
