Feasty Mojo Shrimp

The combination of citrus with a little bit of heat from the jalapeno make these grilled shrimp a hit for any occasion. Grab a loaf of French bread & be sure to save the extra Mojo sauce for dipping!

1 lb. Raw Shrimp, peeled and deveined
1 cup Olive Oil
1 tsp. Chopped Garlic
1 tbsp. Cilantro, chopped
½ tsp. Black Pepper
Lemon Rind

“Mojo” Sauce
½ cup Olive Oil
½ cup Orange Juice
1-2 Habanera or Jalapeno Peppers, chopped (leave a few seeds!!)
Fresh Cilantro
Peel and devein shrimp. Place in a zip lock bag with 1 cup olive oil, chopped garlic and cilantro. Zip lock bag and allow to chill in refrigerator for several hours. Preheat grill & place shrimp on skewers. Combine “Mojo” sauce ingredients in a small sauce pan and place on grill. Grill skewered shrimp until completely pink and firm. Place grilled shrimp skewers on a serving dish and liberally drizzle with the “Mojo” sauce. Pour the remaining sauce in a small dish for dipping. Excellent served with rice or French bread for soppin’ up all that wonderful juice… Enjoy!
