Fiddle Head Hash

I liked it because it was simple, delicious, and filling. The fat from the bacon lent itself perfectly to the bitterness in the breaks, and the earthiness of the potatoes, making a perfect combination.

4 slices thick cut bacon
3 potatoes, chopped into bite size pieces
1 small onion, chopped
1 tbs butter
1 cup low sodium chicken broth
½ lb fiddle head ferns
Salt & pepper to taste
