Filled Indian Garllic Dill Bread


Filled Indian Garlic-Dill Bread made with an Indian dosa recipe, and topped with a traditional spicy filling

1 6-oz potato- already cooked & Peeled
½ of a 4-oz can chopped green chilies- hot or mild to your taste
½ Tbsp. minced garlic
2 Tbsp. vegetable oil
½ Tsp. salt
2 Tbsp. chopped FRESH dill
1-1/4 C. all purpose flour
1 C. cooked meat of your choice (I used pork loin roast)
½ C. chopped white onion
1 C. chopped cucumber
Non stick spray
1 C. Yogurt
½ Tsp. salt
1 Tsp. garam Masala
Warm peeled potato in microwave for about 45 seconds, then mash until it is smooth. Add peppers and garlic, and allow to sit until cooled. When cool, add oil, salt and dill to the potato mixture. Stir in the flour, and work it in to form a soft dough. Transfer to a lightly floured surface, and knead for 2 minutes. Divide the dough in half, and roll each half into a 6 inch rope. Cut each rope into 6 pieces. Form each small piece into a ball then use a rolling pin to form a 4-inch round. Using paper towel in between each dosa, stack the rounds as you roll them out. It is best to use a cast-iron skillet, but lacking one of those, use a skillet that does not require a lot of oil while cooking. Heat an oil rubbed skillet over high heat for about 3 minutes, then reduce heat to medium. Place one dosa on the skillet at a time. When the underside becomes spotted-about a minute, remove from skillet, and stack again between paper towels and repeat until all dosas are cooked. When ready to serve, warm gently in an oven (150*) or 30 seconds in the microwave. Keep them warm in a warm, moist towel. Fill the breads as you would a taco. These breads could be used for a variety of toppings- have a Dosa Party with several fillings available! FILLING DIRECTIONS As Dosas are cooking, warm a frying pan and use 1 second of a non-stick spray in the pan. When warm, add the onion and sauté until translucent. Add meat and stir until onion and meat are well combined, and warm. Add chopped cucumber and stir until just mixed. Transfer to a serving bowl. Keep warm, but don't cook (cucumber should have flavor, but not be limp) Spice Mix Combine all spices and set aside. TOPPING Combine Yogurt and 1 Tsp Spice Mix To Serve: Take one warm Dosa and top with filling Spoon 1 Tbsp Yogurt-Spice Mixture on top Sprinkle on small amount of additional spice if desired
