Fresh and zesty and naturally gluten-free, this Flourless Lemon Cake is perfect for an afternoon tea or dessert by Sugar Salt Magic

For the cake:
1 cup (or 200g) white sugar
200 g unsalted butter, softened
4 eggs, separated
1 teaspoon vanilla
2 Tablespoons lemon zest, not packed (note 1)
1 Tablespoon lemon juice (note 1)
2 ½ cups 250g almond meal
1 teaspoon baking powder
¼ teaspoon salt
For the icing:
1 ¼ cups icing sugar
2 tablespoons lemon juice
