Fluffy Almond Flour GF Blueberry Muffins

The flavor turned out fabulous and they are low fat! The fat and moistness comes from natural ingredients of coconut oil and the almonds in the flour. A must make for breakfast or snacks!

1/2 cup Almond Flour
2 Tablespoons Baking Powder
1 Cup Oat Flour or White Spelt Flour (can find at Whole Foods in dry bulk section)
2 Tablespoons Coconut Sugar
1 Egg
1/2 cup Coconut Milk or regular milk
1 Tablespoon Coconut Oil, melted
1 Tsp Vanilla Extract
1 tsp fresh lemon zest
1 Cup Blueberries
