PREP: Grease Loaf or Muffin Pan PREHEAT: Oven: 350 F. BAKE: loaf pan 50 - 60 min. or muffin pan 20 - 25 min. MAKES: 10 - 12 servings

½ C. Butter, soften
2 Eggs, beaten
2 C. Flour
1 tsp. Baking Powder
4 Bananas, mash
2 tsp. Lemon Juice
1 tsp. Vanilla Extract
½ C. Walnuts, chopped. ( Opt. )

Cream Sugar and Butter. Beat in Eggs, one at a time. Add Vanilla.
Stir Lemon Juice into mashed Bananas, then into Sugar mixture.
Stir in Flour and Baking Powder until just mixed, don’t over mix.
