Variation on the standard cherry pie, with a crust that is much less labor intensive.

Fresh Cherry Crisp

2 cups pitted, fresh cherries
3 tablespoons granulated sugar
4 tablespoons water
1 teaspoon cornstarch

For the Crust:

3/4 cup all-purpose flour
3 tablespoons brown sugar
2 tablespoons granulated sugar
1/8 teaspoon ground cinnamon
1/8 teaspoon salt
5 tablespoons unsalted butter, cut into pieces
