Plantains are cooked in a variety of ways the most popular being frying. When fried they are referred to as Dodo (in Nigeria at least), called other names in other West African countries. On its own, dodo can make a great side dish in combination with other rice or bean dishes.

2 Just ripe plantains

1. Peel the plantain and cut into any shape or size you prefer. Deep fry in hot oil for about 5 minutes or until golden brown. Drain excess oil by placing them on kitchen towel.
