Frozen Pumpkin Pie Cheesecake

A (secretly) simple Thanksgiving dessert. A creamy frozen cheesecake with a hint of pumpkin.

2 sleeves (~2 cups) cinnamon graham crackers
3 tbsp. light brown sugar, not packed
6 tbsp. margarine spread, can sub butter
1 cup pumpkin puree, not pumpkin pie filling
1 (8 ounces) package cream cheese
1 (8 ounces) lite cool whip, can sub regular cool whip
1 (15 oz.) can sweetened condensed milk
½ tsp. pumpkin pie spice
Optional: ½ tsp. butter extract

1 clove garlic
2 T tomato paste
4 c coarsely chopped green cabbage
4 c beef broth
15 oz tomato sauce
14.5 oz petite diced tomatoes
