Fruit Filled Lemon Crepes with Coconut Whipped Cream

Pan fried lemon crepes lined in a muffin tin pan and baked in the oven to form a cup. Filled with homemade coconut whipped cream and topped with freshly sliced fruit and powdered sugar.

2 tablespoons sugar
3 large eggs
2 tablespoons unsalted butter ( melted )
1 teaspoon lemon extract
2 teaspoons vanilla extract
vegetable oil/spray
2 ( 14 ounces cans coconut cream or full-fat coconut milk )
1/2 cup powdered sugar
1 teaspoon vanilla extract/lemon extract
1 cup diced strawberries
1 cup blueberries
1/2 raspberries
2 kiwi ( diced )
powdered sugar ( to garnish )
