A thick sugar cookie base topped with a decadent layer of mint chocolate fudge and topped with a pepper-minty frosting.

1 cup unsalted butter (2 sticks), softened
2 large eggs
2 tsp. vanilla extract
2 cups + 2 tbsp white sugar
2 and ½ cups all-purpose flour
1 tsp. cornstarch
½ tsp. salt
½ tsp baking powder
Fudge Layer
1 and ¼ cup milk chocolate chips
1 and ¾ cup Andes Crème De Menthe Baking Chips (10 oz)
Pinch of salt
1 can sweetened condensed milk
Frosting Layer
½ cup butter, softened (not melted)
2 cups powdered sugar
1 tsp. vanilla extract
4-5 drops of red food coloring
1-2 tsp. heavy cream (or milk)
Optional Garnish
1-2 candy canes, crushed
