Garlic Cilantro Steak Taco's

This is a delicious, easy recipe that can be altered to fit whatever you have on hand - be it pantry or freezer.

Flank Steak (1)
Corn Tortillas (12-24 depending on how much meat you add to each taco)
1 tsp black ground pepper
1/2 tbsp salt
1/2 tbsp cumin & 1/4 tbsp for the Dressing
2 garlic cloves (minced, pressed, etc)
1/2 red onion (small diced)
1 sm lime (for juice)
1/4 cup extra virgin olive oil (or you can use canola or vegetable)
1 bunch cilantro
1-2 tbsp veggie/canola oil

For Garnish:
tomatoes,lettuce, onion, olives, cheddar or pepper jack cheese, avocado and/or guacamole
1) Cut steak against the grain into thin (think fajita) strips. Season to taste with spices. 2) Heat oil in pan. When bubbles come up from tip of wooden spoon, add steak in 2-3 batches at a time. 3) As meat browns up start working on Cilantro Lime dressing. In a mixing bowl, mix together lemon juice, minced cilantro, garlic and onion. 1 tbsp oil to mixture. Stir to combine. Season to taste. 4) As meat is done, pull out onto plate covered with paper towel or napkins 5) Warm corn tortillas in the oven. Make sure they are wrapped in a damp towel and oven is set to 250. To Plate: We serve it informally and fix it right at the table. We take a warm tortilla and put a drizzle of the Garlic Cilantro sauce on the tortilla, then we add about 1 tbsp of meat (3-5 pieces depending on how large you have cut them). Then top with the garnishes of your choice. You can add red pepper flakes or 1 tbsp of the Garlic Chili Sauce for some extra heat. DELICIOUS!!
