A pork loin slow roasted with a crust of garlic, rosemary & prosciutto

1 1/2 lb. pork loin
3 garlic cloves, smashed
1 tbsp. roughly chopped fresh rosemary
1 1/2 oz. prosciutto
1/2 cup panko bread crumbs
1 tsp. kosher salt
fresh ground black pepper to taste
1 tsp. olive oil
1 onion, cut into 8
2 celery stalks
2 carrots, peeled
2 parsnips, peeled
1 bay leaf
1 cup low sodium chicken broth
1/2 cup red wine
