Ginger Orange Chicken

4 lb chicken breast without skin, cubed
3 tbsp ginger root, minced
3 tbsp garlic, minced
1/4 tsp chili powder
3 tbsp white grap juice

Orange Sauce:

1/2 cup soy sauce
1/2 cup water
1 1/2 cups sugar
1 1/2 cups white vinegar

Flavoring & Thickening:
2 tbsp orange juice
3 tbsp corn starch mixed in 1/2 c water to thicken the sauce
Cube chicken and cook in a large non-stick skillet. While chicken is cooking, make the orange sauce -- soy, water, sugar, and vinegar. Orange Sauce -- combine all ingredients in a mixing bowl. Set aside. When chicken is finished cooking, pull meat to one side of skillet and add ginger root, garlic, and chili powder. Let cook until fragrant then add white grap juice, Mix all spices with chicken. Add prepared Orange Sauce to spiced chicken. Bring mixture to a boil. Mix cornstarch in water then add to boiling sauce until thickened. Add Orange juice to taste. Serve over cooked rice with steamed broccoli.
