Gluten Free Apricot Chicken

4 skinless, boneless chicken breast halves
1 tsp chicken boullion
2 tsp onion powder
1 small diced onion
1 cup bottle Russian-style salad dressing
1 cup apricot preserve
Preheat oven to 350 degrees F (175 degrees C). Place the chicken pieces in a casserole dish. Mix the seasonings, dressing and jam together, and pour over the chicken. Bake for 1 hour. Serve over rice
