Gluten Free Chicken Tikka Masala Recipe

This is a recipe for a gluten free chicken tikka masala. This recipe uses Greek yogurt, coconut milk, and chickpeas.

1 cup Greek Yogurt (I’m addicted to Chobani. Hands down, it performs the best. Guaranteed.)
Juice of ½ a lime
4 teaspoons cumin, divided
1 teaspoon cinnamon
2 teaspoons each: cayenne pepper, paprika, black pepper, ground ginger
6 teaspoons salt, divided
2 Chicken Breasts, cubed (feed 4 people)
I can chickpeas, rinsed and drained
1-12 oz can tomato paste
1 can Coconut Milk
1 tablespoon butter
3 cloves garlic, chopped
1 poblano pepper (this is what grows in my garden. I’m sure any variation of pepper or multiple peppers will do!)
2 tablespoons brown sugar

Mix greek yogurt, lime juice, ½ cumin, cinnamon, cayenne, black peppers, ginger and ½ salt for chicken marinade.
Add chicken cubes and marinade in refrigerator for 1-24 hours.
Discard marinade and cook...
