Gluten Free Kiss Cookies

These cookies were always a party favorite. I converted the recipe to be gluten-free and they have the same the same people pleasing effect.

½ cup shortening
½ cup sugar
½ cup brown sugar (packed)
½ cup peanut butter
1 egg
2 T milk
1 tsp vanilla
½ tsp salt
½ tsp soda
1 ¾ cup gluten-free flour
1 1/2 tsp xanthan gum
24 candy kisses
Combine wet ingredients together and then slowly add the dry ingredients together. Mix on low speed till dough forms. Shape into balls. Roll in sugar. Place on ungreased sheet. Bake for 10-12 minutes at 375. Top with kisses before cooled.

Toss with the crisp lettuce, drizzle with the guilt-free flavorful dressing and finally top with croutons and cheese for the perfect main course!
