Gluten Free Peanut Butter Banana Cookie Cups
These peanut butter banana cookie cups are topped with meringue and are gluten free, have no butter and are SO easy to make. These are perfect for kids and adults!

For the Peanut Butter Cookie Cups:
1/4 cup peanut butter
2 tablespoons granulated sugar
2 tablespoons brown sugar, packed
1/8 teaspoon pure vanilla extract
2 tablespoons egg whites, about 1 small egg white
1/2 cup oat flour, certified gluten free
1/4 teaspoon baking powder
1/8 teaspoon salt
For the Meringue:
2 whites egg whites, not liquid egg whites
3 tablespoons granulated sugar
pinch cream of tartar
For the Filling:
1/2 small banana, thinly sliced
1/4 cup peanut butter
chocolate, melted, for drizzling (optional)
