Gluten Free Peanut Butter Chocolate Chip Oatmeal Cookies

This gluten free recipe was adapted from my favorite college cookie recipe. Now that it is gluten free I have continued to make these tasty cookies for parties, showers and picnics. It is still a hit and many people ask for the recipe after they have tasted these sweet cookies.

½ cup butter (melted)
1 cup brown sugar
¾ cup sugar
2 eggs
1 cup peanut butter
2 cups gluten-free flour
1 tsp xanthan gum
1 tsp soda
1/2 cup oatmeal
1 cup chocolate chips
Mix butter, sugars and eggs until smooth. Add 1 cup creamy peanut butter to mixture and mix until combined. Roll into balls and place on ungreased cookie sheet. Bake for 10 minutes at 350.
