Gluten Free Pineapple and Chia Cake

This delicious cake is low in fat and sugar as well as being gluten free

50g brown sugar
30g butter (softened)
1 medium egg and 2 egg yolks
100g pineapple (tinned or fresh) crushed
50ml (1/4 cup) oil
50ml (1/4 cup) Greek yoghurt
2 tablespoons pineapple juice
200g self-raising gluten free flour (I used Doves Farm)
1/2 teaspoon bicarbonate (baking) soda
1 teaspoon vanilla sugar/extract
1 teaspoon chia seeds
