Gluten Free Roast Beef and Prolone Stuffed Peppers

4 green bell peppers
8 slices of gluten free provolone cheese
1 medium onion, diced
1 cup diced bella mushrooms
8 oz diced gluten free roast beef
2 Tbs of unsalted butter
2 cloves garlic diced
Preheat the oven to 350 degrees. Cut peppers in half and remove seeds. Place a half slice of slice of provolone cheese at the bottom of pepper. In a skillet, saute garlic, onion, mushrooms, sliced roast beef and butter. Simmer until onions are transparent. Stuff each pepper with the roast beef mixture and place with another half slice of provolone cheese. Bake uncovered for 30 minutes.
