Gluten Free S'more Graham Crackers

Last summer I was looking for a graham cracker recipe that I could use to make s'mores while camping. With a few tweaks this recipe has become a everyday standard as well as a favorite for the summer camping trips.

2 cups Gluten-free Flour Blend*
¼ cup Brown Rice Flour
½ cup Brown Sugar
2 teaspoons Cinnamon
1 teaspoon Baking Powder
½ teaspoons Baking Soda
½ teaspoons Salt
½ teaspoons Xanthan Gum
7 Tablespoons Butter, Cut Into Small Pieces
3 Tablespoons Cold Water
3 Tablespoons Honey
1 teaspoon Vanilla
¼ cup Brown Rice Flour
½ cup Brown Sugar
2 teaspoons Cinnamon
1 teaspoon Baking Powder
½ teaspoons Baking Soda
½ teaspoons Salt
½ teaspoons Xanthan Gum
7 Tablespoons Butter, Cut Into Small Pieces
3 Tablespoons Cold Water
3 Tablespoons Honey
1 teaspoon Vanilla
Combine flour, brown sugar, cinnamon, baking powder and soda, salt and xanthan gum in a large glass bowl. With a fork cut butter in until in pea six balls. Add water, honey and vanilla to flour mixture and mix with spoon. Next mix with hands kneading into a ball. Refrigerate until chilled. Roll out on ungreased cookie sheet. Bake at 325 degrees for 15-20 minutes until golden brown.
Cut as soon as you pull out of the oven. Remove to cool.
*I use a flour blend of rice flour, cornstarch and tapioca flour that works wonderful! To make a batch mix 2 cups brown rice, 2/3 cups cornstarch and 1/3 cups tapioca flour.
