PREP: grease 8 x 8 " baking pan REHEAT: Oven 350 F BAKE: 45 min. MAKES: 9 Servings

½ tsp.Cinnamon
1 ½ tsp. Baking Soda
1 tsp. Baking Powder
? C. Canola Oil
1 C. Sugar
3 Eggs
1 ½ C. grate Carrots
½ C. Pineapple, crushed
½ C. Pecans, chop
Opt: ¼ C. golden Raisins or Shredded Sweetened Coconut
Cream Cheese Frosting
Mix Flour, Cinnamon and Baking Soda. Mix Sugar, Oil and Eggs. Stir in Flour mixture, Carrots and Pineapple until just blended. Pour into pan. Bake until center of cake springs back to the touch. Cool 15...
