Golden Fried Prawns.

1 kg prawns
2 eggs
2 tablespoons cornflower
salt to taste
4 tablespoon oil
10 garlic cloves
4 tablespoon soya sauce
3 tablespoon tomato sauce
2 tablespoon oyster sauce
little water
1.5 teaspoon brown sugar
2 cups spring onions sliced
2 inches ginger peeled and cut into juliennes.

4 tablespoon soya sauce
3 tablespoon tomato sauce
2 tablespoon oyster sauce
little water
1.5 teaspoon brown sugar
2 cups spring onions sliced
2 inches ginger peeled and cut into juliennes.
Clean and divine prawns, mix together eggs, cornflower and salt into batter and coat the prawns, heat oil to almost smoking point. Fry prawns into batches for just a couple of minutes and drain and set aside. Remove all but 2 tablespoons oil from the pan add garlic and chilly paste.
Fry for a minute then add soya sauce, tomato puree, oyster sauce a little water, salt and sugar stir well. Check seasoning.
When sauce starts boiling drop into prawns stir to coat well and cook another minute add spring onion and ginger toss and stir another minute remove from heat.
