The homemade version of Tom Colicchio's Meatloaf Sandwich. A hearty ciabatta encases a juicy meatloaf topped with a delicious tomato relish and melted cheese!

Meatloaf:
1/2 medium yellow onion, diced
1 tbsp. extra virgin olive oil
1 garlic clove, minced
2 lbs. ground beef
2 large eggs
3/4 c. bread crumbs
1 tbsp. chopped, fresh oregano
2 tbsp. Dijon mustard
2 tsp. salt
1 tsp. ground pepper
2 tbsp. ketchup
6 ciabatta rolls
6 slices sharp cheddar cheese
6 slices of bacon, cooked
Tomato Relish:
2 tbsp. extra virgin olive oil
1 small yellow onion, halved and thinly sliced
1 garlic clove, finely chopped
1 tbsp. sugar
1 tsp. curry powder
1 tsp. sherry vinegar
1 (28 oz.) can whole tomatoes
2 tsp. chopped, fresh oregano
2 tsp. salt
Pinch of ground pepper
1/4 c. parsley leaves, chopped
2 tbsp. whole grain mustard
