Grandma Jo's banana bread

We almost always have bananas that we've let go too long. To use those up, I make this banana bread. Originally made in a "slow" wood oven by my great grandmother Josephine, this is a great basic recipe! I like to play around with it and sometimes add applesauce in place of half the butter, or add in a handful of chocolate chips depending on my mood. I have also substituted a cup of canned pumpkin for the bananas- the recipe is versatile!

4 Tablespoons stick butter or margarine
1 cup sugar
2 1/2 cups all purpose flour
2 eggs, beaten
3 Tablespoons water
1 teaspoon baking soda
1/2 teaspoon baking powder
3-4 mashed overripe bananas, mashed
1 cup nuts (optional)
1 teaspoon salt

Preheat oven to 300.
Spray a 9x5 pan with non-stick spray. Set aside.
In a large bowl, mix all ingredients together.
Pour mixture into prepared pan and bake for 60-90 minutes or until a knife inserted into the middle of the loaf comes out clean.
