Grandma Liz's Famous Brown Sugar Fudge

This is a different kind of fudge. It's light and melt-in-your-mouth and incredibly yummy. It takes a bit of care in how long it boils so that it reaches the "soft-ball" stage. If you have a candy thermometer, you can control this better. I do what Grandma does, and just eyeball it. If it won't set (which occasionally happens to me), just dump it back in the pan, remelt it, and boil it longer. It's very forgiving!

1 cup white sugar
1 cup brown sugar
2 Tbsp honey or corn syrup
1/4 cup butter
1/2 cup milk
1/2 tsp vanilla
Dissolve first 5 ingredients in a pan over heat. Bring to a boil and turn temperature down so it stays boiling but doesn't scorch. Boil, stirring constantly for 8-10 mins, or until fudge reaches "soft-ball stage". Remove from heat. Set pan in shallow sink of cold water, and stir in vanilla. Pour into buttered pan and allow to set. The fudge is set when hard and lighter in color. Cut into pieces.
