Granola Bites

Delicious Granola Bites for little ones. They don't fall apart!

1 1/2 cups old fashioned oats
1/3 cup rice cereal
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/4 cup chopped dried cranberries
1/4 teaspoon salt
1/4 cup honey
1/4 cup vegetable oil
1/4 teaspoon vanilla
2 tablespoons flax seed
Baking spray
Preheat oven to 350. Using a mini-muffin pan, spray the cups with baking spray. Mix all ingredients together in a large bowl. Spoon ingredients into each muffin cup to the top. Press down each filled cup with the back of your spoon. Cook for 10-13 minutes or until golden brown. Remove from oven and press down each cup again. Must cool pan for at least 45 minutes before removing Granola Bites from cups. To remove press down on granola with fingers and twist. They will come right out. Makes 24 mini cups.

6 ounces cream cheese
1/3 cup salsa style tomatoes (or salsa)
1 tablespoon hot sauce
1 cup shredded cheddar cheese
1 cup shredded Pepper Jack Cheese
