Greek Lemon Chicken

Lemon slices give this slow cooker meal a fresh, bright taste.

1 lemon, thinly sliced
¾ lb boneless skinless chicken breasts
Greek seasoning, to taste
½ yellow onion, sliced
10.75 oz can cream of chicken soup
1 cup fat-free chicken broth
1 cup frozen peas
13.75 oz can artichoke hearts in brine, drained and rinsed
½ cup heavy whipping cream
½ lb package Dreamfields rotini pasta
Place lemon slices in a single layer on bottom of 3 to 4 quart slowcooker. Layer chicken breasts and onion on lemon slices. Top with cream of chicken soup and chicken broth, spreading to cover onion. Layer remaining lemon slices over soup. Cover and cook on Low heat 6 to 8 hours or until chicken is tender. After 6 hours, cook rotini according to package directions. Remove chicken from slow cooker; add peas, artichoke hearts and whipping cream to onion and lemon mixture, stirring to combine. Serve chicken and sauce over hot cooked rotini. Great with a Greek salad or sauteed spinach with garlic.

I love it because it's great for a holiday dinner. Everyone raves and it get devoured in no time. But, it's also perfect for busy weeknights. You can easily assemble this casserole ahead of time and stash it in the fridge until you're ready to eat it. Then just bake it off. 30 minutes and done!
