Sweet scallops top this Greek style couscous salad filled with color veggies and tangy feta.

1/8 cup fresh lemon juice
1/2 cup water
1 tablespoon extra virgin olive oil
1/8 cup red wine vinegar
1 tablespoon Dijon mustard
1/8 teaspoon garlic salt
1/4 teaspoon onion powder
1/8 teaspoon sugar
1 teaspoon oregano
1/2 teaspoon dried parsley
1 teaspoon grated lemon rind
1 cup couscous
2 cups water
1 teaspoon extra virgin olive oil
1/4 teaspoon lemon rind, grated
1 1/2 cups tomatoes, seeded and chopped
1 cup orange bell pepper, thinly sliced
1 cup red onion, thinly sliced
2 cups cucumber, thinly sliced
6 whole green olives, sliced
1 pound sea scallops
1 teaspoon extra virgin olive oil
6 ounces reduced fat feta cheese, crumbled
