Green Bean Panzanella Salad

Fresh greens beans are the star of this veggie bread salad. Packed with flavors from shaved fennel, paper thin red onion, olives, and feta! A Mediterranean delight!

1 pound green beans, trimmed
1 cup (loosely packed) shaved fennel bulb
½ red onion, thinly sliced
½ cup chopped olives
4 ounces feta cheese, crumbled
¼ cup olive oil
¼ cup red wine vinegar
kosher salt
Freshly ground pepper
1 tsp sumac (optional)
2 slices whole grain crusty bread (about 1 inch thick and about the width of your palm)
Prepare an ice-water bath; set aside. Bring a large pot of water to a boil over medium-high heat. Add beans; simmer until just tender, about 5 minutes. Plunge beans into ice-water bath to stop the cooking....
