Grilled Honey Lime Shrimp

A simple and healthy dinner that my kids adore!

2 lbs. peeled ( deveined raw shrimp )
¼ cup freshly-squeezed lime juice ( about 2 limes )
¼ cup rice vinegar
¼ cup Dijon mustard
½ cup honey
¼ cup minced fresh chives
2 teaspoons minced fresh garlic
2 teaspoons salt
1 teaspoon pepper
½ cup extra-virgin olive oil
