Grilled Lime Coconut Chicken with Coconut Rice

This is tasty and the best part is you get to use the whole can of coconut milk! No waste!

3 tablespoons oil
Zest and juice of 1 lime
1 teaspoon ground cumin
1 1/2 teaspoons ground coriander
2 tablespoons low-sodium soy sauce
1 teaspoons salt
2 tablespoons sugar
1 teaspoons Sriracha sauce
1/2 cup canned coconut milk
pinch cayenne pepper
3 chicken breasts
1/4 cup chopped fresh cilantro

Coconut Rice:
1 cup basmati rice
1 cup canned coconut milk
1 cup water
1/2 teaspoon salt
