Grilled Mango Spinach Salad with Cranberries

A colorful salad with grilled mangos, crunchy spinach, chewy cranberries and crispy pancetta. A wonderful color, flavor and temperature combination.

2 whole mangos
3 ounces sliced pancetta
3/4 cup dried cranberries
6 cups baby spinach
4 tablespoons extra virgin olive oil
1 tablespoon verjus blanc
salt and pepper
