Grilled Spicy Pork Chops with Pineapple Relish & Sweet Potatoes

One day at the gym, I was watching the Rachael Ray Show and they had a segment about Dole Pineapple. She made a pineapple relish for hot dogs. I don’t eat many hot dogs these days but I thought the relish would be perfect with a grilled pork chop. I used the pineapple juice from a can of Dole Pineapple to marinade the pork chops. I also added some cumin, paprika, salt & pepper. It paired perfectly with the pineapple relish!

2 sweet potatoes, scrubbed and diced
Cooking Spray
Brown Sugar
Cumin
Paprika
Salt & Pepper

For the Pineapple relish
2 tbsp canola oil
1/2 cup red onion, minced
1/4 cup red peppers, minced
1 jalapeno, minced
2 cloves, grated garlic
1 20-ounce can pineapple rings, grilled, then chopped
2 tbsp cup cider vinegar
Zest and juice of 1 lime
1 tsp whole grain mustard
Salt and pepper, to taste
2 tbsp cilantro, chopped

For the Pork Chops
4 bone-in pork chops
Pineapple juice
Extra virgin olive oil
1-2 tsp Cumin
1-2 tsp Paprika
Salt & Pepper
