Grilled Vegetable Skewers

We grill year round in Central Texas, but summer vegetables are my favorite ones to grill. You can always pick and choose what you like, but the key point is that everything must be sliced to a similar size and take about the same time to cook. These skewers are great as a side or main dish. We served these with Mango Curry Skewered Chicken and a quinoa brown rice mixture.

6 Wooden skewers soaked in water for 30 minutes
2 zucchini, sliced
2 yellow squash, sliced
1 red onion, sliced into squares
1 red bell pepper, sliced into squares
1 green bell pepper, sliced into squares
10 mushrooms, I bought what was on special that week and about the same size as a slice of squash
salte and pepper to taste
2 T olive oil

Preheat grill to 400?.
Skewer all the vegetables mixing them up to get a variety on each one.
Drizzle olive oil over the skewered vegetables and then sprinkle with salt and pepper.
Place on grill and cook...
