Gutti Vankay Kottimeera Curry/Stuffed EggPlant Coriander curry

Today I am posting another famous and interesting Andhra recipe with Brinjals(Egg Plant),one can either stuff them with the aromatic coriander stuffing or it can be prepared like a curry by cutting the brinjals into pieces.This is a very simple yet delicious and aromatic curry as it is loaded with lots of coriander.It pairs well with rice and even with roti/chapati.If you have not tried this before do give a try,I am sure you will definitely like this.

250 gms small baby Brinjals equally sized,
2 cups loosely packed Coriander leaves,
1 large onion,
5-6 Green chillies,
2 tsp Coriander seeds,
1tsp jeera,
4-5 garlic cloves,
a sprig of Curry leaves,
8 tbsp Oil,
1 tsp turmeric powder,
Salt to taste
first slit brinjals into 4 pieces like the name gutti vankaya and kept a side by pouring water and little bit of salt into cutted brinjals. cut onions and take them into mixer add green chillies coriander seeds,jeers,garliccloves and coriander leaves and mix it into smooth paste. later take a large pan or vessel, add oil and add masala paste and add little bit salt and fry for 4minutes in slow flame. once it is cooked add turmeric powder and brinjals into it and fry for few seconds. once the brinjal is changing color please see the 2nd picture add water approximately 1 cup and cook it in medium flame. cook until oil comes out of the gravy and brinjals are soft and add finely chopped coriander leaves and curry leaves, the Gutti vankaya Kottimera curry is ready to dish out.
