This is a very simple and fast recipe to make. It is really tasty, and I don't even like sausage. It's also one of those recipes that works both for me, as I don't eat gluten, and the rest of the family, that does't always like my gluten free concoctions.

6 Eggs
1 cup Milk
2 cups Hash brown Potatoes (I used frozen and thawed them in the microwave for a minute)
2 cups Sausage (I used pork sausage, but any kind will work. You can substitute for ham and/or bacon)
1 Medium size Onion
1 Bell Pepper(I used a red gypsy pepper from the Farmer's Market, but you can use any kind)
1 cup of shredded mozzarella
olive oil (I actually use sunflower seed oil in all my cooking)
salt and pepper to taste
1 cup Milk
2 cups Hash brown Potatoes (I used frozen and thawed them in the microwave for a minute)
