The cabbage is a lot more nutritious than iceberg lettuce, and the kids couldn’t taste the difference. Light sour cream has fewer calories than regular sour cream. Avocados are very healthy – encourage the kids to add at least a few chunks to their mix. Refried beans are very healthy, and when mixed in with the meat the kids couldn’t taste that they were eating beans! If you encourage the kids to go easy on the sour cream and the cheeses, you have a healthy, easy, delicious meal!

1.5 lb. ground turkey or ground beef
1 can refried beans
1 medium onion
1 package taco seasonings (check the label for one with spices, not a lot of sugar)
1 T. cumin (optional)
1 package shredded Mexican cheeses
2 packages shredded green cabbage

1 or 2 avocados
