These unique healthy blueberry muffins use a touch of basil for some spring flavor! The sun dried tomato and basil muffins have creamy bursts of goat cheese in every bite! They’re both gluten/oil free, protein packed and perfect for brunch!

For the muffins:
1 1/2 Cups (197g) + 1/4 tsp Pamela\'s Products Gluten Free Baking and Pancake Mix, divided
1 1/2 tsp Baking powder
1/2 tsp Salt, divided
1/2 Cup + 1 Tbsp Unsweetened almond milk, divided
1/4 Cup + 2 Tbsp Plain, Non-fat Greek yogurt
1 Large egg
1/3 Cup Thinly sliced basil, lightly packed
Pepper
1/4 Cup Sun-dried tomatoes (not packed in oil,) finely chopped.
2 Tbsp Goat cheese, crumbled (1 oz)
1/4 Cup Honey
2 tsp Vanilla extract
1/3 Cup Fresh blueberries
