Healthy Buckwheat Pancakes

It’s pancake day soon and I’ve been testing lots of different recipes this week, I really love this one and hope you do too. The recipe makes 3 pancakes, but you could always double up on ingredients to make more. I’ve topped mine with berries, ground almonds, honey and oats although any type of fruit or nut would also taste good. Pancakes can be healthy and nutritious, as well as delicious with this simple buckwheat recipe – hope you have a healthy, happy Pancake day.

275ml almond milk
1 free range egg
1 cup/125g buckwheat flour
1 tsp. coconut oil

Optional toppings: blueberries, raspberries, ground almonds, honey, oats
