Healthy Build Your Own Pancake Bar

This HEALTHY PANCAKE BAR is sure to please your entire family. Everyone gets to top their pancakes with toppings of their choice, so there shouldn’t be any complaining!

1 3/4 cups whole wheat pastry flour
1 cup oat flour (1 cup old-fashioned oats blended to a powder)
2 teaspoons sugar
1 Tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cup almond milk (or your milk of choice)
1/2 cup vanilla, lowfat Greek yogurt
4 Tablespoons extra virgin olive oil
1 teaspoon vanilla extract
dash or two of cinnamon
toppings of your choice (berries, nuts, jams, etc)

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
