HEALTHY CHICKEN STIR FRY WITH CORIANDER AND SPICY SWEET SAUCE

This healthy chicken stir fry has fresh coriander and a spicy, sweet sauce. It’s a healthy, gluten free and paleo friendly meal that’s ready in 30 minutes!

1 Cup Uncooked white rice *
1 Lb Boneless, skinless chicken breast, cubed
4 tsps Ground coriander, divided
2 Tbsp Olive oil
1 tsp Fresh ginger, minced
2 Portobello mushrooms, chopped
1 Red bell pepper, chopped
4 Large stalks of Bok Choy, chopped with the stalks and leafy parts divided (about 4 cups total)
1/2 Cup + 2 Tbsp Reduced-sodium chicken broth
1/2 Cup Coconut aminos
2 Tbsp Coconut sugar
1 Tsp Sriracha + additional for garnish, if desired
For serving:
Juice of one large lime
1/4 Cup Thai basil, minced
Toasted sesame seeds, for garnish
