Decadent, moist, chocolate cake with NO EGGS, NO BUTTER, AND NO MILK! Low sugar and whole wheat flour. You mix AND bake in the same pan so no dirty dishes :) Great recipe for dutch oven cooking and camping because of ingredients.

1/4 cup whole all purpose flour
1/2 cup whole wheat pastry flour
1 1/2 T. cocoa powder
1/4 cup sugar (or xylitol for sugar free)
1/2 tsp. baking soda
1/4 tsp. salt
1/2 tsp. white vinegar
1/2 tsp. vanilla
2 1/2 T. vegetable (or coconut) oil
1/2 c. water
For the frosting:
1/2 cup powdered sugar or xylitol (or 1/4 cup Truvia baking blend)
1/4 tsp. corn starch
1 1/2 T. butter (or butter substitute for Vegan)
1 oz. baking chocolate, unsweetened
1/8 tsp. salt
1/2 tsp vanilla
1/2 cup whole wheat pastry flour

Mix first 6 ingredients in a 9" glass pie pan. (Double the recipe for 9" square...double again for 9x13). Make a depression in the middle of the dry ingredients and add wet ingredients beginning with water. Mix well until smooth. Bake for 20-25 minutes (35 for larger cakes). Check for doneness with a toothpick
For the frosting: Mix cornstarch and powdered sugar (if using Truvia or xylitol, you will want to blend it first to form a fine powder). Whip butter and add sugar mixture. Melt chocolate in microwave and poor over sugar. Whip until smooth.
