Healthy Chocolate Crazy Cake-YUM

Decadent, moist, chocolate cake with NO EGGS, NO BUTTER, AND NO MILK! Low sugar and whole wheat flour. You mix AND bake in the same pan so no dirty dishes :) Great recipe for dutch oven cooking and camping because of ingredients.

1/4 cup whole all purpose flour
1/2 cup whole wheat pastry flour
1 1/2 T. cocoa powder
1/4 cup sugar (or xylitol for sugar free)
1/2 tsp. baking soda
1/4 tsp. salt

1/2 tsp. white vinegar
1/2 tsp. vanilla
2 1/2 T. vegetable (or coconut) oil
1/2 c. water

For the frosting:
1/2 cup powdered sugar or xylitol (or 1/4 cup Truvia baking blend)
1/4 tsp. corn starch
1 1/2 T. butter (or butter substitute for Vegan)
1 oz. baking chocolate, unsweetened
1/8 tsp. salt
1/2 tsp vanilla
Mix first 6 ingredients in a 9" glass pie pan. (Double the recipe for 9" square...double again for 9x13). Make a depression in the middle of the dry ingredients and add wet ingredients beginning with water. Mix well until smooth. Bake for 20-25 minutes (35 for larger cakes). Check for doneness with a toothpick For the frosting: Mix cornstarch and powdered sugar (if using Truvia or xylitol, you will want to blend it first to form a fine powder). Whip butter and add sugar mixture. Melt chocolate in microwave and poor over sugar. Whip until smooth.
