Soft and delicious oatmeal cookies bursting with Piña Colada Flavors. All healthy ingredients and easy to make!

1 cup whole grain spelt flour
2 cups quick cooking oats
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon ground vanilla (or seeds from 1/2 a pod)
1/4 teaspoon salt

2 tablespoons coconut oil, melted
3/4 cups maple syrup
1 medium banana, mashed
2 medium sized eggs

1/2 cup dried pineapple, chopped
1/3 cup unsweetened shredded coconut
