It's been a looooong time since I've roasted a whole chicken. We usually buy the value pack of chicken thighs, which I roast and keep in the fridge for easy lunch-making during the week, but this week the large organic chickens were on sale! Enjoy! | www.MommyHiker.com

1 Whole Chicken
1 small brown Onion
1 Lemon
5 cloves of Garlic
1 bunch of Thyme
1 bunch of Rosemary
1 bunch of Oregano
1 Tbsp of Cumin
1 Tsp of Salt
1 Tsp of Pepper
1/4 cup of Extra Virgin Olive Oil
1 pint of Grape Tomatoes
1 bulb of Fennel chopped
5 cloves of Garlic chopped
1 package of baby Carrots
1 cup of Chicken Stock
