Homemade Broccoli Soup Healthy Tasty Lunch

300g Broccoli (cut into florets)
1 Onion (chopped)
2 Potatoes (chopped)
750ml Vegetable Stock
1/4 tsp Squeezed Lemon Juice
2 Bay Leaves
1/2 tsp Salt
Black pepper
1/4 cup Milk
1. Combine the broccoli, onion, potatoes, stock, lemon juice, bay leaves, salt & pepper in a saucepan & bring to the boil. 2. Cover & turn the heat to low, simmer for 25 minutes until vegetables are tender. 3. Remove from heat & discard the bay leaves. 4. Blend with a blender or food processor. 5. When smooth add the milk. 6. Serve in a bowl with a sprinkle of black pepper.
