Homemade Shredded BBQ Chicken Sandwiches

A quick, delicious homemade BBQ sauce makes these hard to beat!

2 (16 oz.) jars salsa
1 1/2 Tbsps. apple cider vinegar
1/3 cup brown sugar
1 tsp. garlic powder
1/2 tsp. chili powder
1 lb. boneless chicken breasts
2 cups shredded cheddar cheese
1 pkg. hamburger buns
In a medium pot over medium-high heat, bring salsa, vinegar, brown sugar & seasonings to a boil. Add the chicken to the pot. Reduce heat to low. Cover & cook for 30 minutes until chicken is fork tender. Remove chicken from pot to a cutting board. Using 2 forks, shred the chicken. Return shredded chicken to pot along with sauce. Heat until mixture is hot & bubbly. Serve the BBQ chicken on buns, topped with shredded cheese.

Marinated Taro Root

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
