Honey Pear Ginger Sesame Chicken

A sweet and slightly spicy chicken dish with a nutty finish!

2 boneless, skinless chicken breasts

Salt and pepper

1 ripe pear

1 Tablespoon dried onion

4 cloves garlic, minced

2 teaspoons ginger

1 tablespoon red pepper flakes

1/2 cup honey

1/4 cup ketchup

1/2 cup low-sodium soy sauce

2 tablespoons sesame oil

5 teaspoons cornstarch

1/3 cup water

Brown Rice (cooked)

1 tablespoon (or more) sesame seeds

3 scallions, chopped
1. Place the chicken breasts in the crock pot. Salt and pepper both sides. 2. Slice the pear and spread on top of the meat. 3. In a separate bowl, mix the onion, garlic, ginger, honey, ketchup, soy sauce, oil and red pepper flakes. 4. Pour on top of chicken. Cook on high for 2 hours, turning the meat halfway through. 5. Remove chicken from the sauce and dice. Set aside. 6. Mix the cornstarch and water. Add to the sauce and cook on high in the crock pot for 10 minutes, or until the sauce is thick. 7. Serve the meat on a bed of rice. Top with sauce, scallions and sesame seeds. 8. Enjoy!
